Grilled Cheese & Barbecue Sandwich

First I should explain that when I say 'Barbecue' I mean pulled pork. This is important. This sandwich could turn out differently if I'm not clear.

One day I had some leftover barbecue that I wanted to eat. Having no slaw, hush puppies or green beans I wasn't really sure how to eat it. This is what I came up with. The Grilled Cheese & Barbecue Sandwich.

Your ingredients:
Barbecue (enough)
Sliced Bread (2 slices)
Cheese (I used Colby Jack)
Butter (real butter, this isn't supposed to be a heathy meal)
Barbecue Sauce (a dollop)

I like it with the barbecue heated so I microwaved it until hot.

Construction is pretty much like any other grilled cheese sandwich. Butter one side of each slice of bread, place in pan and add a layer of barbecue.

Add barbecue sauce. Now is a really good time to make sure the stove is turned on.

As much cheese as you want. Really, nobody is watching.

Top with the other slice of bread.

Wait for the delicious smell of the Maillard reaction and flip. I know you already think you want to eat it but wait until the other side is done.

I ate this with chips and salsa. You might have gotten a picture of that, but I didn't want to wait on eating it. It was every bit as delicious as it looks.

I'm not going to say this is perfection. There is plenty of room for improvement and variation. You could add caramelized onions. You could use Macaroni and Cheese (the baked kind). You could figure out how to deep fry it. All these could be improvements but this was simple and didn't take any extra work on my part.
